Crafting Comfort an Irish Classic: Colcannon

Colcannon is a traditional Irish dish that combines creamy mashed potatoes with tender cooked cabbage. This beloved Irish dish marries the rustic charm of mashed potatoes with the earthy goodness of cabbage, resulting in a symphony of flavors and textures that warm the soul. With its Celtic origins, Colcannon is typically served on Halloween night and is said to aid in fortune-telling.

Ingredients

  • ½ Savoy Cabbage
  • 2 cups Water
  • 2lb Russet or Idaho Potatoes
  • ¾ cup Milk
  • 3 Green onions
  • 3 tsp Salt divided
  • ½ tsp Pepper
  • ¾ cup Melted Butter
  • ½  lb Cooked Bacon chopped or crumbled
  • 3 tbsp Fresh Parsley chopped

Instructions

Place cabbage in your pot with water and bring to a boil. Reduce heat and simmer covered for about 10 minutes. Drain the cabbage but reserve liquid for later use. Set Cabbage aside but keep warm.

Next, add the potatoes in the same pot you boiled the cabbage using the liquid from the cabbage you saved. You may need to add more water to cover the potatoes. Bring to a boil. Reduce heat and continue to cook until you can pierce with a fork easily, about 20 minutes.

In a separate pot combine the milk, green onions, salt, and pepper. Right before it boils remove from heat. Making sure not to burn.

Drain the potatoes and place them in a large bowl to mash. I recommend mashing by hand as you don’t want to over-mash or whip them. Add the contents of the smaller pot to the potatoes and mix till blended. Fold in the cabbage.

Plate and top with bacon bits, parsley, and drizzle melted butter. Colcannon is great served with Bangers or stew. Enjoy!
